I did not feel like cooking today, so I thought I'd try the raw taco "meat" made from soaked walnuts and some other stuff. It is SO GOOD! I used 1/2 cup of walnuts (soaked in hot water), a Roma tomato, some pickled jalapenos, taco seasoning, and some of my favorite hot sauce - tobacco chipotle.

I topped it with a homemade mango salsa (made from a mango, tomato, pickled jalapenos, onion, lemon and a dash of maple syrup)

It is actually very filling! I only ate half of the prepped taco "meat." Now to see if my gut complains!
