Whole red lentils (masoor dal, with the skin on) pressure cooked with salt, turmeric, and whole cloves of garlic, and tempered with black mustard, dried red chillies, and thin sticks of sliced ginger, finished off with a bit of ghee and chopped coriander (neither visible due to inadvisable pre-photo vigorous stirring).
