An olive stall in the main market of Meknes. The very low diversity in varieties of olives in Morocco (the Moroccan Picholine is the dominant clone) is offset here by the wide variety of modes of preparation. Similarly, a large variety of olive oil types are found in Morocco, which differ principally in their modes of preparation and areas of origin, rather than in their varietal diversity.
