In 1978 Dr. Robert Nerem conducted a study to establish the relationship between high blood cholesterol and heart health. He fed a group of rabbits a high-fat diet. Predictably, they gained weight and their cholesterol values spiked dangerously high but when he looked at their arteries under the microscope, only 40 perfect of the rabbits showed visible heart disease. The other 60 percent weren't at risk for heart attack or stroke.

Baffled, he repeated the study with a new group of rabbits; the results were identical. The hidden factor wasn't cholesterol.
