@kevingranade I have heard a bunch of people tell me that this recipe/approach has already been made multiple times since I posted it and has swiftly moved into "household staple" mode. It's maybe the world's most popular staple meal, present and especially historically, and it's so good and healthy and cheap, I am glad more people are discovering the joy of it

@kevingranade Have you tried a khichdi version? Basically mung beans and rice cooked together in a rice cooker. I like to add onion, mustard seeds and cumin seeds sauteed in a little ghee to mine. You can serve it with a wet curry or with yogurt and pickle or alone.
