Wow, I just reinstalled NixOS and I didn't have to download gigabytes of data!

The trick was to build a custom ISO using nixos-generators. This ISO contained the same programs and configurations as the system I wanted to reinstall. When I then ran nixos-install from the live installer, it was able to source most paths from the local Nix store!
