Map news alert: @jakelow built a really nice looking vector tile set with Planetiler called Sourdough (https://sourdough.osm.fyi/). It's unique in that it follows OSM tagging quite closely, so it's a great place to start experimenting with what's available. Then it's very easy to fork and remove data if you need speed.
