Here, we make enchiladas by dipping corn tortillas into hot chile sauce, frying them and stacking them with onion and cheese then topping the whole thing with a fried egg. It looks like a lot of people make enchiladas by rolling tortillas around some sort of filling, topping that with sauce and cheese then baking the whole thing. Sounds yummy!
