Here's the recipe for those Puerto Rican Habichuelas Rosadas. Even though the recipe says pumpkin, I doubt the author meant jack-o'-lantern. Kabocha, Butternut or Hubbard would all be good choices for the pumpkin. I don't eat much meat so I subbed in mushrooms and chipotle for the pork. Since chipotle is plenty spicy I left out the green pepper. I can't get culantro so I used a bunch of cilantro including the stems.
