In the 1990s, when typing, I was simulating an EM DASH using 2 hyphens. I.e.,:

For example:

I wanted vanilla ice cream, but -- she wanted strawberry ice cream.

Which, with an actual EM DASH, would be:

I wanted vanilla ice cream, but — she wanted strawberry ice cream.

...

I recall using 2 hyphens to stimulate an EM DASH to be common.
