@jeromeJérôme This is correct, Mastodon supports quote posts implemented as FEP-044F, which require a compatible server implementation that can provide a proof that the quoted person approved the quote post.
Right now, no server implement this (yet) but we know that some will do so soon, and Mastodon will in 4.5.

So right now, the only quote posts that will be displayed as such in Mastodon 4.4 are quote posts by some servers (like Akkoma) where the post author is the same account as the quoted post, because those do not require an approval stamp and Mastodon always consider those as approved.
If you have a fediverse account, you can quote this note from your own instance. Search https://oisaur.com/users/renchap/statuses/114625712661626744 on your instance and quote it. (Note that quoting is not supported in Mastodon.)
