Enby breakfast: egg bake!

9 medium eggs, 30g coarsely chopped coriander, 200g quartered cherry tomatoes, two red bell peppers chopped into ~7mm squares, 100g smoked streaky bacon cut into small pieces, 75g vegan cheddar cheese, and a bit of freshly ground black pepper.

Cooked the bacon in a frying pan on a low-medium heat until crispy, removed it onto a paper towel saving the grease, cooked the bell pepper in the grease until it started browning, added the tomatoes, cooked until they seemed done.

Put everything in the well-beaten eggs, stirred, poured into the foil pan, covered with aluminum foil, baked in fan oven at 170°C for about 35 minutes, took foil off, let it cook for another ten minutes.

Came out fantastic!
