I did this year’s Kimjang with my mom (about two weeks ago). Making her homemade kimchi paste was a lot more complicated — besides garlic, ginger, red pepper powder and many different greens, it also needs seasonal fruits (three kinds), three different fish sauces, and fermented salted seafood.
