남성 카테고리를 사실상 트랜스 여성을 여성 카테고리에 끼워주지 않기 위해 이름만 "오픈"으로 바꾸고 (명목상 트랜스젠더와 논바이너리를 포함하나 트랜스남성의 경우는 불분명. 반대로 여성 카테고리는 *출생* 지정성별이 여성인 경우에만 가능) 또 여자가 아니라면서 여성 수영복을 입지 않으면 경기 퇴장도 가능하다고.

뚝배기 안에 붉은 국물이 가득 차 있고, 산더미처럼 쌓인 돼지부속 고기가 그 위에 있고 후추가 뿌려져 있다.
저는 순대국을 잘 못 먹습니다. 어릴 때 잘 먹는 줄 알았는데 나이가 들고 보니 어릴 때 먹던 가게가 먹기 편했던 것이고, 많은 순대국 가게의 순대국에서는 돼지고기 부속고기에서 나는 냄새가 꽤 강하더라고요. 그래서 저는 제가 맛있게 먹을 수 있는 순대국을 찾아 이곳저곳을 다니며, 전라북도 완주시 삼례읍에 있는 유성식당도 우연히 알게 된 이후 자주 다니게 된 곳입니다.
전주로 (자동차로) 출장을 다니는 분이 자주 들르신다는 트윗을 알게 된 이 곳은, 사진에 있는 전통순대국밥 기준으로 순대가 없으며, 붉은 국물인 상태로 서빙되며, 밥이 토렴되어 있습니다. 특으로 주문하면 돼지 부속이 사진처럼 고봉으로 나오며, 보통으로 주문해도 꽤 푸짐하게 건더기가 들어가 있습니다.
다대기를 풀어 넣는 과정 없이도 밸런스가 딱 맞는 국물과 냄새가 깔끔하게 잡혀서 부담없이 먹을 수 있는 것이 제가 아는 이 가게의 특징이었습니다만, 최근에 갔을 때는 조금 돼지 냄새가 느껴져 아쉬웠습니다. 돼지부속고기가 아낌없이 들어간 것 치고는 여전히 괜찮은 편이지만요.
한 가지 더 좋은 점은 아침 7시부터 하는 가게라는 점입니다. 서울에 사는 제가 현실적으로 그 시간에 먹을 일이 없긴 한데, 남부터미널에서 삼례 가는 시외버스를 타거나 혹은 KTX를 타고 익산역에서 내려 시내버스로 이동하여 11시 전에 먹을 수 있다는 건 좋습니다. 한 그릇 먹고 적당히 삼례 읍내, 삼례시장 청년몰, 삼례역사를 활용한 전시를 둘러보는 것도 좋아하는 활동이죠. 그러다 다시 시외버스를 타고 돌아오고. "순대국을 먹으러 거기까지 간다고?"같은 이야기를 종종 하게 됩니다만, 저는 다녀올 만하다고 생각합니다.
