Happy international non-binary people's day! 
At some level everything is binary. You can make a classifier that puts everything into two bins. There are memes about how all video games are "menus" or "parkour", etc. My point is binarization is always something you can do.
Non-binary-ness to me is an assertion that gender, like most of the real world, is more complicated than a binary classifier would make it seem. It's a rejection of over-simplification.
